Indulge Bistro and Wine Bar Coming to BackCountry’s Sundial House

by Shea Homes Colorado on April 23, 2013

When Peter and Delinda Fatianow considered the next step for their growing and popular boutique eatery, Indulge Bistro and Wine Bar, they envisioned an arm that would have all the authentic taste of the popular fare they’d become known for – light, easy, elegant and accessible food – but with a nod toward casual elegance presented in an intimate setting.

So when the long-time Highlands Ranch pair discovered BackCountry by Shea Homes– whose residents have chosen it for its resort-style amenities, superb location and its award-winning Sundial House – they felt intuitively they’d come upon a niche where their newest branch of Indulge would naturally fit.

Peter and Delinda instinctively saw a jumping off point from their existing eateries as a new go-to favorite with BackCountry diners. Winner of the OpenTable.com Diner’s Choice award four years in a row, and the winner of the prestigious Top 100 Notable Wine Lists in the U.S. in 2012, the couple hopes to bring a smart-casual atmosphere that’s ideal for relaxing with friends, where diners can enjoy truly elevated food and distinguished wine coupled with proper exceptional service, as well as Colorado-style ambiance.

“Indulge is simply an ideal match for our community and our residents,” says Lifestyle Director Britany Chambers. “The quality of food and wine and level of service they’re adding to our offerings is something we’ve needed and wanted. Their taste level is such a complement to BackCountry and we’re delighted they’ve become a part of it. There’s certainly a buzz in the air around their arrival and we’re all looking forward to the official opening.”

Slated to open late April 2013, Indulge at BackCountry will begin to offer light fare such as tapas, small entrees and its delectable flatbreads from its established Highlands Ranch and Golden locations.

Celebrating its grand opening in May, service will begin in the Sundial House on Friday and Saturday evenings, then this summer expand providing bar and food service to the pool and the community amphitheater. Indulge will also be available to cater food and beverage for BackCountry residents’ special events in the Sundial facility as well.
The community’s Sundial House is a luxurious, private retreat and a central gathering point for a variety of activities and social interaction. Residents are now enjoying the center which includes grand terraces and outdoor patios, fitness and movement studios, and spa treatment rooms.

BackCountry is a private, gated community nestled away on some of the last available land in Douglas County’s community of Highlands Ranch.  BackCountry’s location against a picturesque and rugged backdrop — the 8,200-acre Backcountry Wilderness Area, 240 acres of interior open space in addition to the the 467-acre South Rim open space — complements its unique selection of Colorado-style new home architecture and living.  BackCountry is also home to Shea Homes and features three collections starting from the mid $400s.

BackCountry is reached by going south from C-470 on Broadway to just south of Wildcat Reserve Parkway.
